Monday Menu: Apricot-Nut Breakfast Bars

Trying to decide what to have for breakfast on a Daniel Fast can be challenging, especially if you're used to having eggs, bacon, and toast or a bagel with cream cheese for the first meal of the day. When your choices are somewhat limited, as they are on this fast, you need to be open to new combinations of foods. The good news is, though, that you don't have to eat beans and rice for breakfast!

You can find a variety breakfast recipes on my blog, but I want to suggest one in particular for today's Monday Menu - Apricot-Nut Breakfast Bars. These tasty treats look like cookies, but they're healthy! They don't contain any added sugar, but, instead, are naturally sweetened with apple juice, dried apricots, and dates. The oats and flaxseed meal provide fiber, and the sunflower seeds and almond butter give you nice amounts of protein, vitamin E, and beneficial fats.

Apricot-Nut Breakfast Bars are a great choice even when you're not on a Daniel Fast. Enjoy!
