Monday Menu: Spirulina Energy Bars

I started using spirulina powder about a year ago. Spirulina is a blue-green algae that's rich in protein, vitamins, minerals, and carotenoids (antioxidants that can help protect cells from damage). I'd never even heard of spirulina powder until my friend, Elena, suggested that I add a tablespoon or two to my smoothies.

Last week, I tried a bar with spirulina, and it was really good. Of course, then I was motivated to come up with a Daniel Fast verson of it. Today's Monday Menu recipe, Spirulina Energy Bars, provides the nutrition and energy your body needs. It's an ideal snack to take with you on an afternoon hike, bike ride, or family outing.

(Note: If you don't have access to spirulina powder, you can still enjoy these energy bars. They're just as tasty without it!)

Spirulina Energy Bars

1 cup raw cashews
1 cup roughly chopped dates, tightly packed
¼ cup raw sunflower seed kernels
2 tablespoons unsweetened coconut flakes
2 tablespoons spirulina powder
Mix ingredients in a food processor or blender for about 45 seconds, or until a ball is formed. Press into an 8 x 8-inch baking dish. Use your hands to flatten, pressing dough to edges. Place in a refrigerator for 1-2 hours before cutting into 2 x 2 1/2-inch bars. Store in a sealed container in refrigerator.
Yield: 12 servings (serving size: 1 bar)
