Make your own V-8 drink!

Since today is day one of our fast, today's recipe is Garden Fresh Vegetable Juice. Ideally, you would use produce from your own garden to make it. However, since our garden didn't do well this summer because of a lack of rain, I was only able to use fresh basil and parsley. Everything else I had to buy at the store. :(

If you're new to juicing, let me warn you ahead of time that this recipe is NOT sweet. It's always a challenge to make a 100% vegetable juice taste good. This one, though, is better than most because the fresh herbs add some nice flavor. No, it won't be as yummy as fresh juices that contain fruit, but it's packed with many nutrients that your body needs. Plus, it's much better for you than a can of V-8, which is loaded with sodium your body doesn't need!


Garden Fresh Vegetable Juice

3 ripe tomatoes
2 cups fresh spinach leaves
2 stalks celery
1 cup chopped red cabbage
1/4 cup fresh parsley, lightly packed
6 basil leaves
