Get your Vitamin C!

After a 45-minute workout this morning, followed by a 35-minute sauna session (little treat to myself), I made this juice as a post-exercise drink. It was wonderful! It's extremely beneficial for your body, especially when you need a boost of vitamin C. I haven't felt too well the past few days, so I thought I needed to ramp up my C anyway.

If you haven't tried juicing, let me challenge you to consider adding as a part of your Daniel Fast. You can get a good, quality juicer at a decent price if you're willing to shop around. I was able to pick up a used Champion juicer on ebay a few years ago, and I have more than gotten my money's worth.

There are only two ingredients in this juice: oranges and kale. You already know how good oranges are for you, but did you know that kale is considered to be a nutritional powerhouse? Not only is it high in vitamin C, it's also a powerful antioxidant, a great source of vitamins A and K, and contains fiber and omega-3 fatty acids. Pretty impressive for a leafy green vegetable, I'd say!

Kale-Orange Juice

3 large navel oranges, peeled
2 cups chopped kale leaves, ribs removed

Wash kale leaves well. Feed through juicer.

Yield: 2 servings (serving size: 8 ounces or 1 cup)

Recipe Notes
  • Make a smoothie by adding ingredients in a blender. Add ice to thicken.
