Daniel Fast Smoothie

I've been on a smoothie kick this past week. Smoothies are an ideal way to pack in highly nutritious foods that are easily digested. They're also really yummy!

It all started when my friend and fellow vegan blogger, Elena, challenged me to a 3-day green smoothie cleanse. Since I'd never done anything like that, I accepted! I thought it would be a great jump start for my Daniel Fast, which starts Sunday. (Plus, it was a good excuse to buy the blender I've been wanting to get, which I would HIGHLY recommend, by the way. I LOVE my new KitchenAid 5-speed blender! It's 1/4 of the price of the big dog machine, the VitaMix. I'm sorry but I just can't justify $400 for a blender, no matter how powerful it is.)

Today's recipe, Berry Blast Smoothie, is my daughter Isabelle's creation. It has quickly become one of our favorites! It only contains fruit, but you can easily make it a "green" smoothie by adding any one of a number of leafy green vegetables. See the Recipe Notes below for ideas.

Now, I'm going to pay it forward and challenge you to something. I'm setting a goal for myself to drink one smoothie per day on the Daniel Fast, which will probably be my breakfast meal or my mid-morning snack.Who will join me in having one smoothie a day, or even one or two a week, over the next 21 days? Anyone?

Berry Blast Smoothie

1 cup water
1 cup frozen blackberries, blueberries, and raspberries
1 banana, peeled

Yield: 2 servings (serving size: about 8 ounces or 1 cup)

Recipe Notes
  • Your smoothie will taste best if either the berries or the banana is frozen. To freeze bananas, remove peels before placing in freezer. Put in a plastic zip-top bag until completely frozen.
  • To make this a "green" smoothie, add 1 cup of fresh spinach or kale leaves (stems removed from the kale).
  • Add 1 tablespoon flaxseed meal for a fiber boost.
