
Baked Oatmeal
1 ½ cups old-fashioned rolled oats
1 ½ cups unsweetened almond milk
½ cup unsweetened applesauce
¼ cup chopped dried apricots
¼ cup chopped dates or raisins
¼ cup chopped pecans or walnuts
½ teaspoon cinnamon
¼ teaspoon salt
Instructions
Preheat oven to 350 degrees. Put all ingredients in a large bowl and stir well. Transfer to an 8 by 8-inch baking dish that has been lightly rubbed with olive oil. Pour oatmeal mixture into dish and bake 45-50 minutes or until slightly browned and crispy on top.Yield: 6 servings (serving size: 2 squares)
Recipe Notes
- Spread almond butter or Date Honey on each serving.
- This recipe can be doubled and baked in a 9 by 13-inch casserole dish.

Hey, can I get almond milk anywhere, or would I have to go to a healthfood store?
You can purchase it at Price Cutter, but you will pay a lot more for it. The best price that I have found is at Mama Jean's, where it's currently on sale for $1.99. Almond Breeze is the brand I recommend. :)
Kristen, can you substitute skim milk for the almond milk do you think? If you aren't doing the Daniel Fast....

This Mama Jean's that everyone speaks of... where is it? Is that an Ozark thing? I feel dumb...I've been here for over two months now, and still haven't really taken the time to get acquainted with a lot of the area.
Yes, Mama Jean's is a Springfield thing, sort of like a smaller version of Whole Foods Natural Markets. There are two locations. The one closest to you is at the corner of S. National and Republic Road, just west of Seminole Baptist Temple. You should check it out. I love that place. :)
OMG.. you know Whole Foods! Do they have those down here? What I wouldn't give to roam a WF right now... :-) Getting homesick.
