So that was my inspiration for today's recipe- Oatmeal Raisin Cookies.
Instead of using whole wheat flour, I opted for a sweeter touch - almond flour. Now, I have to warn you that almond flour is expensive. It's not something you want to use all the time, but it's certainly nice to splurge when the occasion calls for it, like during a Daniel Fast. You can buy almond flour at local health food stores. Some grocery store chains have it as well.
I was pretty pleased with how these came out - no dairy, no sugar, and completely gluten-free! After testing three batches, I think I've finally got it just right. Tell me what you think!
Oatmeal Raisin Cookies
1 cup old-fashioned rolled oats
1 cup almond flour or oat flour
1 cup creamy cashew butter, almond butter, or peanut butter
1/2 cup applesauce
1/3 cup Date Honey
1/2 cup raisins
2 tablespoons chopped walnuts
1 teaspoon cinnamon
Preheat oven to 350 degrees. Mix oats, almond flour, cashew butter, applesauce, and Date Honey in a large bowl until well combined. Add raisins, walnuts, and cinnamon. Stir well. Drop by spoonfuls, two inches apart, on an 11 by 17-inch baking sheet. Flatten and shape into circles. Bake 10-12 minutes.
Yield: 18-20 servings (serving size: 1 cookie)
Recipe Notes
- Make your own oat flour by placing old-fashioned rolled oats in a food processor or blender and process until fine (1 cup old-fashioned oats will yield about 3/4 cup ground oats).
- Increase applesauce to 1 cup if you don't use Date Honey.

What about rice flour
Yes, I think as long as you are using brown rice flour (brown rice is a whole grain) that you could definitely use it. Good question! Thanks for visiting my blog. I pray that the Lord will richly bless you as you seek Him.
Also, I revised the recipe just a bit. You can also use 1/2 cup applesauce instead of 1/2 cup mashed banana. Or, try a combination of both!
I baked the cookies today and used ground oats instead of Almond flour, didn't want to drive across town to our health food. I found the cookies to be very dry, could it be because of the oat flour that was used? Next time I might use 1 cup of applesauce to see if that moisten the cookies some.
Hey, Rena. Actually, since I posted that recipe last fall, I found that using applesauce DOES make it more moist. Also, if you add 1/4 cup date honey, the cookies are absolutely amazing! I need to update that recipe.
Next time I'll increase the applesauce to one cup. I'll try the date honey also. I love oatmeal raisin cookies, so I'll keep at it until I get it right.

what about brown rice syrup, only ingredients are organic brown rice and filtered water?
Brown rice syrup...when I first saw the word "syrup," I immediately thought "contains some sort of sugar." However, if the ingredients are only brown rice and filtered water, then it would be considered Daniel Fast friendly. Perhaps the syrup part is a bit of a misnomer, kind of like my Date Honey recipe, which doesn't have a bit of honey in it! Thanks for your question and for checking out the blog!
I just made these with 'prune honey' as I couldnt find anything else. They were still yummy but I think the prunes affected the flavor. I look forward to trying them again when I can get my hands on some dates!
I did these without the date honey, and they came out good. I found I liked them better when I squished them down into a cookie shape. And they are better after sitting over night. They're a great treat!

I must have done something wrong when I made them - my date honey was not at all sweet and the cookies came out very heavy and not at all tasty - whole batch went in the bin.... wish I had had as much success as everyone else.
I'm sorry you didn't have a good result! How did you make your date honey because dates, by nature, are extremely sweet. Boiling them only increases the intensity. Did you add the cinnamon?
